Pizza Veggies!

Are you overflowing with yummy, colorful vegetables from your garden? Trying to come up with new and interesting ways to serve them? Well, try my Variation on a Theme from the Whole Foods for the Whole Family Cookbook. I took their recipe for Zucchini Pizza and put my twist on it -- what delicious flavor!

I placed chunks of the following into a skillet: tomatoes, zucchini, red onion and green pepper. I gently sauted them, adding oregano, parmesan cheese and a tiny bit of cheddar cheese.

Cook until just crisp-tender so as to retain nutrients! YUM! It was definitely a hit at dinner tonight!

Oh, our barley, carrots and herbal fiberblend arrived this week! So glad as we were without for two weeks -- much too long to go without my barley!

It is simply amazing how our bodies assimilate GOOD, nutritious whole foods! Thank you, God, for giving us such a colorful and tasty variety!

Have You Had Your Greens Today?

I messed up -- again; I haven't had my greens yet today and it is nearly noon! So, as soon as I finish this blog, it's BarleyLife for me! I need the energy boost it gives me as well as all the live enzymes and nutritional content.

If you're like me, you've read, heard and know you are supposed to eat plenty of greens but you have difficulty consuming as much as you think you need -- and some of the greens, well, let's just say you need to acquire a taste for them. Eventually you will -- maybe. In the meantime, how can we more easily consume the greens and other vegetables and fruits we need? Well, how about juicing?

You can juice lettuces, kale, and other vegetables for a very healthy drink that your body will be glad to receive. You can do the same thing with fruits. I love to make fruit smoothies with berries, cherries and bananas mixed with almond milk or rice milk, a little bit of vanilla flavoring and sometimes some ground flaxseed or powdered fiber mix. The flaxseed is great for fiber as well as being an excellent source of a "good" oil to consume.

Back to the greens: we recently began consuming young barley grass which is cultivated in a very pristine environment in Canada. It comes in a powdered form and when mixed with water or juice and consumed right away, it gives your body a real healthy energy boost. Do I like the flavor? Not so much but when I blend it with certain things, it is much easier to swallow -- things such as powdered carrots and beets and/or a tablespoon of Bragg's Organic Apple Cider Vinegar, the juice from half a lemon, a pinch each of cayenne pepper, ginger and turmeric and 6 ounces of water. Are you saying "yum" yet?!
